    HOW TO PROTECT YOURSELF FROM NITRATES
    To avoid the accumulation of nitrates, do not plant vegetables in the shade of trees, promptly remove weeds from the beds that sometimes shade plants, avoid neglected plantings.
    It should also be remembered that the ability to accumulate nitrates largely depends on early maturity. The earlier vegetables ripen, the more harmful nitric acid salts are stored in them. Therefore, the "nitrate champions" are parsley, dill, lettuce, spinach and other greens. And also vegetables such as radishes, carrots, beets, black radish. It is better to grow them without the use of nitrogen fertilizers, and sow on the beds a year after application, but beans and peas only in the third year.
    It has been established that in carrots, radishes and beets, the most nitrates accumulate in the top. Potatoes have more nitrates in the skin and under it (that's why it's better to refuse potatoes in their uniform).

    For the same reason, it is also advisable to peel cucumbers and cut off their tails.
    The harm from nitrates can be neutralized by placing peeled vegetables in a container of water for four hours before cooking. The nitrates will go into the water. But, unfortunately, together with nitrates, vitamin C, monosugar, and other substances important for the body pass into the water.
