No matter how hard we try to preserve the harvest of potatoes, we still occasionally get flustered and the valuable product freezes (they forgot to close the outlet, left a bag with tubers on the street). And many are worried about the question whether it is possible to eat frozen potatoes.
HOW TO UNDERSTAND WHAT HE DIMENSIONS
The tubers have some resistance to low temperatures, but it lasts only a few hours and, of course, depends on the temperature - the lower it is, the faster the potato freezes.
The potato can only freeze slightly, and can freeze through. Moreover, according to the first sensations, it is difficult to disassemble the degree of exposure to cold. But you can easily understand exactly what happened. Put the potatoes in a warm room for a couple of hours, then try to cut. If everything went smoothly, and in the middle of the tuber was the usual color, then with him almost everything is in order. But if it was impossible to cut or it was possible to do this operation with great difficulty, then the situation is much worse: the tubers are frozen to the full depth.
WHAT HAPPENS TO THE FROZEN CLUB
Potato pulp consists of various elements. But the main place in it is starch, related to polysaccharides. These are complex sugars, whose structure under the influence of low temperatures (0 and below degrees Celsius) begins to break down. That is, starch breaks down into constituent substances, the main of which is glucose. It was she who gives the frostbitten tubers a sweetish taste. And when ingested frozen 8 potatoes are warm storage conditions, the glucose partially re-turns into starch, but not all.
DANGER OF FROZEN POTATO
Some authors argue that frozen potatoes turn into a toxic substance - they say, toxins are released during freezing. This is completely wrong. The processes occurring in potatoes under the influence of low temperatures are thoroughly studied and scientifically established that they are quite natural. People claiming the opposite encountered improperly thawed potatoes, which were also cooked without taking into account its “frostbite”.
In fact, nothing wrong with the tubers and they retain in themselves almost all of the nutrients that were in them before the frost. Do not be afraid to eat such potatoes for food and treat them to households. The only thing is that not everyone likes the sweet taste that frozen potatoes acquire. But there are those who consciously freeze potatoes precisely for the sake of this sweetish aftertaste.
In addition, in the shops you can find frozen peeled potatoes, which are thus prepared for long-term storage. So there is nothing scary or critical in such a product.
However, if the potato was then frozen, it was thawed, and many times, the likelihood of damage. It’s better to throw such potatoes away from sin. It is also worth doing with tubers that have spent frozen for a long time - more than 2-3 months.

WHAT TO DO WITH SUCH STONES
The most important thing you shouldn’t do when you start “thawing” frozen potatoes is to put it in a very warm place: a hot battery or next to a burning burner. In this case, the potato "float", will be soft, unsuitable for cooking and unpleasant to eat. To cook something, put frozen frozen tubers in a saucepan with cold (you can barely lukewarm) with water and let them thaw on their own. Potatoes will regain the usual (albeit sweet) taste. In order for it not to be too loose after this procedure, I would advise you to add approximately 1 tsp. vinegar on xnumx l of water.
Such potatoes are not the best for frying (they quickly turn black, lose their pleasant taste and become indigestible), it is best to use it for making soups and mashed potatoes. However, if fried potato dishes are the basis of your culinary preferences, then you can use thawed tubers to make potato pancakes.
Note
Starting the "reanimation" of frozen potatoes, select from the heap only the amount that you will be able to use at one time, increasing the "rate" by about a third. This is necessary in order to remove all suspicious tubers during thawing and thereby protect themselves.
Another option for using such potatoes is to feed livestock. You can’t especially stand on ceremony here. Wash the potatoes in water, fill with water and cook until cooked. Due to its low temperature, the process will take a little longer than usual, but the result will be the same. Then cool the potatoes and boldly give the cattle. The only limitation is that cattle may at first be surprised at the sweet taste, so start with small doses, and then bring them back to normal.
